RECIPE FOR SPRING 2018 | Tomato and Herb Salad with Goat's Cheese

Chèvre is a French word simply meaning goat, and that's where Sofia's story begins.

Farmers who used fresh goat's milk to make cheese have referred to goat's cheese as 'chèvre' for centuries, and the use of the word spread with the cheese's popularity. First comes the milk, which is directly linked to the land, or 'terroir', where the goats roam.

With Christmas fast approaching this salad will complement your normal Christmas fare. It's fresh, healthy, and really easy to create. And, it will appeal to vegetarians and carnivors alike. Enjoy!

Ingredients 

  • 60ml olive oil
  • 2 tbsp balsamic vinegar
  • Pinch caster sugar
  • Sea salt flakes and freshly ground black pepper
  • 700g ripe mixed tomatoes
  • 100g goats cheese
  • Fresh parsley, basil, dill to serve

Method

  • Combine the oil, vinegar and sugar in a jug and season
  • Place the tomatoes in a large shallow bowl and drizzle with the dressing
  • Set aside for 20 minutes to let the flavours develop
  • Transfer the tomatoes to a platter
  • Crumble over the goats cheese and scatter with herbs
  • Drizzle with a little dressing and serve topped with herbs
