Authentic Greek island salad

The following recipe is another that was handed down to Sofia by her mother, with Sofia adding her own touches to create this traditional Greek island salad. Did you know that the ingredients for authentic Greek salad do not include lettuce or any other popular salad leaves?

Serves 4


  • 4 medium size firm though ripe tomatoes
  • ½ medium size telegraph cucumber
  • 1 small Spanish onion
  • 3 tablespoons fresh continental parsley.
  • 2 leaves fresh mint
  • 4 teaspoons virgin olive oil
  • Salt to taste
  • 100g Dodoni Greek feta or goat’s feta
  • Pinch of dried fine oregano
  • 8 Greek Kalamata olives


  • Cut tomatoes in half and then into bite sized wedges
  • Slice cucumber into medium sized slices
  • Finely slice onion
  • Finely chop parsley and mint, setting aside a generous teaspoon for the final garnish
  • Cut feta into bite size cubes and springle with oregano
  • Add the tomatoes, ¾ of the onion rings, parsley and mint to a large bowl and mix together with olive oil and salt
  • Drizzle cucumber with olive oil and lightly salt
  • Decorate the outer edge of a medium sized platter with cucumber slices and place the salad mix in the centre of the platter
  • Decorate with the remaining onion rings and oregano sprinkled feta cheese
  • Scatter with olives and sprinkle reserved parsley/mint mix on top
  • Lastly just give the salad a very light drizzle of virgin olive oil

  • Enjoy on its own with continental crusty bread, or as a side dish with Greek meatballs (keftedes).
