Chocolate fondant pudding with rum raisins

There's nothing more decadent in the cooler winter months, or at any other time come to that, than chocolate. This recipe is not only decadent, it's divine! The rich combination of chocolate and rum soaked raisins is pure indulgence. Go on! Be naughty! Give this delicious recipe a shot...and enjoy!

Serves 6

Preparation and cooking time: 45 minutes | Difficulty: Easy


  • 2 tablespoons rum
  • 150g Cadbury dark chocolate melts
  • 150g butter, chopped
  • 3 eggs
  • ¼ cup caster sugar
  • ¼ cup flour


  • Combine the raisins and rum in a microwave proof bowl and cook on 50 per cent power for two minutes
  • Melt the dark chocolate and butter in a bowl over simmering water, stirring occasionally until smooth
  • Remove from heat and cool slightly
  • Beat the eggs and sugar together with an electric mixer until light and fluffy
  • Fold in the chocolate mixture, then the sifted flour and, finally, the raisins and rum
  • Spoon the mixture into six greased and cocoa dusted 1/2 cup ramekins
  • Place on a tray and bake in a hot oven 200°C for 15 minutes or until cooked as desired
  • Turn out onto serving plates and serve immediately with a scoop of pure cream or ice-cream

Sofia's tip

  • For the ultimate experience, you must achieve that lovely gooey centre when the pudding cracks open. All ovens vary so it's very important to watch your cooking times.
