Fresh fruit with red wine syrup

During winter, when many of us eat more substantial and flavoursome foods than we do in the warmer months, we're often looking for a refreshing dessert.

I came across this lovely summery recipe with a taste of Christmas spices and thought 'this fills the bill perfectly'.

With strawberries, raspberries and blueberries readily availabe at reasonable prices in fruit and super markets, this recipe might just be the refreshing dessert you're looking for to replace those heavier desserts we tend to crave during the cooler months. You can also serve it on the side of a hot dessert — delicious! 

Whether it's winter, summer or in between, this dessert will bring a refreshing taste of Christmas to your table. Enjoy!

Serves 4

Preparation and cooking time: 20 minutes | Difficulty: Easy


  • 500g of mixed fruit, depending on the season (e.g. peaches, strawberries, raspberries, figs)
  • 300mL red wine
  • 100g sugar
  • 1 cinnamon stick
  • 2 cloves
  • 1 star anise
  • 50g flaked almonds, toasted
  • Dollop cream, to serve or ice-cream. 


  • Cut the fruit in chunks and arrange on decorative plates
  • Place the wine, sugar, star anise, cloves and cinnamon in a saucepan and bring to the boil gently
  • Cook on a simmer until the wine reaches a syrup consistency
  • Allow to cool
  • Pour the wine over the fruit and keep in the refrigerator until ready to serve
  • Sprinkle the toasted almonds over the fruit and add a spoonful of cream.
