Kumara and goats cheese salad

It might be winter right now, but here's your opportunity to bring summer to your dinner or lunch table. Susan Graham from Gubbuteh Road has submitted this tasty and versatile salad. You can serve it warm or cold, as an entree or side...and it's healthy! What more could you desire?

Serves 4 as an entree, more as a side

Preparation / cooking time: 60 minutes | Course: Entree or side | Difficulty: Easy


  • 350g baby spinach leaves
  • 3 medium kumara
  • 150g soft goats cheese
  • 100g pine nuts
  • 2 tablespoons olive oil
  • Herbs to taste: rosemary, thyme, cumin


  • Cut kumara into cubes
  • Place kumara cubes into a greased oven proof dish and sprinkle with olive oil and herbs
  • Season to taste with sea salt and cracked pepper
  • Bake for around 40 minutes at 180°C or until crispy
  • Place pine nuts in an oven proof dish and bake until slightly brown
  • Break up goats cheese into small chunks or crumble if you prefer
  • Mix all ingredients in a shallow salad bowl
  • Add your favourite dressing (mine is olive oil and balsamic vinegar)

Susan's suggestions

  • Enjoy this tasty salad, warm or cold, as an entree or a side dish and, for a change, add diced beetroot, avocado and thinly sliced red onion
