Susan Graham, from Gubbuteh Road, has kindly submitted her very own version of quick and easy lasagne. You can't go wrong with this one. It might be bad for the diet but it's pretty delicious for an occasional treat. And, if you can't be bothered or don't have time to go the whole hog, you can use the meat sauce for spaghetti bolognese − just add grated parmesan after serving.

Serves six


Meat sauce

  • 500g lean beef mince
  • 1 medium onion
  • 2 or 3 cloves garlic
  • Tablespoon olive oil
  • Chopped herbs – optional (basil, parsley, and or oregano)
  • Jar of your favourit bolognese sauce − Susan uses Leggos

Cheese sauce

  • 50g butter
  • ¼ cup plain flour
  • 1½ cups hot milk
  • 1/3 cup (40g) finely grated cheddar

Extra ingredients

  • Instant lasagne sheets
  • ½ cup finely grated mixture of cheddar and parmesan cheese (for final sprinkle before placing in oven)


Meat sauce

  • Chop onions and garlic
  • Microwave oil onions and garlic in casserole dish for approx 3 mins on high until onions and garlic are soft
  • Crumble in beef mince, stir through onions and garlic (add optional chopped herbs) and microwave on high for around 5 mins, stirring after three mins, until beef is not red any more
  • Add bolognese sauce and stir through
  • Microwave on high for 5 mins then stir
  • Microwave on medium heat for a further 10 mins then stir well

Cheese sauce

  • Melt butter in medium saucepan
  • Add flour and cook over medium heat, stirring until mixture thickens and bubbles
  • Gradually stir in milk, stirring until sauce boils and thickens
  • Cover surface of sauce with plastic wrap
  • Stand 5 minutes
  • Stir in cheese over medium heat

Lasagne construction

  • Preheat oven 180°
  • Spray rectangular baking dish with oil
  • Coat bottom of dish with thin layer of meat sauce
  • Add lasagne sheets to cover
  • Add 1cm meat sauce
  • Repeat layers finishing with a layer of meat sauce
  • Pour over cheese sauce, smoothing with a spoon or spatula if required
  • Sprinkle with additional cheese
  • Cook for around 40mins in middle of oven (check instant lasagne packet for cooking times)
  • When done (pasta is soft), you can place under grill to brown the top if desired
  • Best left to stand for around 5-10 mins before serving.

Susan's suggestions

  • Serve with a green leafy salad...and a glass or two of your favourite red if you really must!
